[Recipe] Nasi Campur Bali (Balinese Mix Rice)

Hello guys.. This time, let me share the recipe of Nasi Campur Bali (Balinese Mix Rice). I hope you will try and enjoy it. :)
Nasi Campur Bali (Balinese Mix Rice)

Jukut Urab
Jukut Urab Preparation
Ingredients :
100 gr long beans, blanched and cut into 3 cm size
50 gr bean sprouts, blanched
100 gr coconut, grated and steamed

Spices (ground) :
6 red chilies
4 shallots
2 cloves garlic

2 kaffir lime leaves (daun jeruk)
1 cm lesser galangal (kencur)
1/2 tbsp salt
1 tsp sugar
1/2 tsp shrimp paste (terasi)

Method :
Mix long beans and bean sprouts with seasoned steamed grated coconut and ground spices. Stir well. Serve as Balinese Mix Rice side dish.

Sate Lilit
Sate Lilit Preparation
Ingredients:
300 gr fish fillet (spanish mackerel), finely chopped
100 gr coconut, grated
1/4 tsp tamarind (asam jawa)
1 tsp salt
1 tbsp palm sugar, grated

Spices (ground) :
6 shallots
3 cloves garlic
2 red chilies

1 cm turmeric (kunyit), roasted
1 cm ginger (jahe)
3 candlenuts (kemiri), roasted
1 tsp coriander (ketumbar)
1/2 tsp shrimp paste (terasi), roasted
Sate Lilit Preparation
Method :
1) Mix the finely chopped fish fillet with tamarind, salt, palm sugar, and ground spices. 
2) Add the grated coconut. Mix it well.
3) Take one part of fish batter, shape around a stalk of lemon grass become like a baseball bat.
4) Heat oil in a skillet, put satay on it. Cook satay with a back and forth until cooked evenly, remove from heat. Serve as a complementary for Balinese Mix Rice.

Ayam Pelalah
Ayam Pelalah Preparation
Ingredients :
500 gr chicken fillet
1 tsp salt
3/4 tsp sugar
1 bay leaf (daun salam)
1 stalk lemon grass (batang serai)

Chicken's Spices (ground):
6 shallots
3 cloves garlic
1 cm lesser galangal (kencur)
2 cm galangal (lengkuas)
3 candlenuts (kemiri), roasted
1 cm turmeric (kunyit)
6 red chilies

Sambal (ground) :
6 shallots
3 cloves garlic
6 red chilies
1/2 tsp shrimp paste (terasi), roasted
3/4 tsp salt
3/4 tsp sugar
1 tsp lime water

Method :
1) Place the chicken in a heat resistant container or pan, coat the chicken with ground spices, salt, sugar, bay leaf and lemon grass. Set aside for about 1 hour until well marinated.
2) Heat oil in a skillet. Add the chicken, stir until cooked.
3) Mix chicken with its sambal. Rough-shredded chicken meat. Serve as a complementary for Balinese Mix Rice.
